The wedding was a fall event in the mountains. The goal was to create something that conveyed both the season and the place (a mountain resort). We describes our aspirations to Peggy. We did not ask her to duplicate a photograph of any existing object, but rather to create something that expressed the "feel" of the entire destination wedding. We spoke to her about the mood we wanted to create and showed her swatches of the colors we wanted to use. Her design of fall-hued leaves, acorns, and branches perfectly captured the spirit of the event. Perhaps, the only thing better than the way it looked was the way it tasted! I am used to seeing attractive cakes with icing and fondant that is designed to be decorative and protect the cake--not to be eaten. But Peggy's fondant is heavenly! In fact, many guests commented that it was the best tasting wedding cake they had ever been served.
Peggy's album of ideas is extensive and her offerings of options very lenghty. There were many options we could have chosen, but at the tasting we were unanimous on our final choice .... interestingly, not one we originally put together at all, but one she suggested. Peggy listens with care to your desires, but is open with offering suggestions about what options go together well and which ones are less successful. Like shopping at Tiffany's where one can't buy a tacky object, it's impossible to make a bad cake decision under Peggy's care!
Quite simply...exceeded it! The cake looked gorgeous, tasted fabulous, and Peggy and Stan are great people to work with. They deliver what they promise, on time, and in perfect condition. And in our case, that involved driving the cake across the state of Maine. These are highly professional people who are proud of their work....and that attitude shows all through the design process and in the resulting product.
Have I mentioned the word "rave"? And please allow me to put that in context.... this was a destination wedding with all of the guests coming from large urban centers--New York, Philadelphia and Chicago. So this was a group who dine out a great deal. Their reaction was universal...THEY LOVED IT!
What did you get and how did you like it? My cake was a work of art. Every single cake from NECC is one-of-a-kind, and they're all gorgeous. I was so proud of my cake with its branch of apple blossoms twining up the side and the spray of autumn leaves to the side. It almost hurt to cut it. Once cut, however, it disappeared very quickly! People were talking about how tasty that cake was for weeks!
Did they have any other options you liked? Peggy has a huge photo album of cakes she had done in the past, and each one was a gem. The best part about NECC, though, is that each cake is unique. You look at the photo album to get ideas for YOUR cake, not to pick one out of a line up. As far as the flavors, it was very hard to choose, as they all tasted REALLY good. I don't think I could've gone wrong.
Were you happy? Would you do it again? They exceeded it. I asked for several additions to the cake after our meeting (I added more guests, and I wanted more decoration) and Peggy gracefully accommodated my every whim. The cake was delivered without a hitch even though my wedding took place down a very bumpy and curvy dirt road. I'm just glad I didn't have the responsibility of getting it there in one piece!
What was the best comment from a guest? Everyone was awed by the cake. I was so proud to have such a beautiful cake. I know that my guests liked the way it tasted, since the pieces were snapped up as soon as they were cut.
What did you get and how did you like it? The cake I chose was out of the Martha Stewart wedding cakes and Peggy translated it perfectly. It was a small three tiered cake with cascading sugar orchids. All our guests raved about the cake and couldn't believe the sugar flowers were edible. We chose two flavors -- raspberry cream for one tier and almond crunch -- because we couldn't decide between the two. Literally, everyone came back for seconds and my matron of honor asked for more slices of cake to take with her as she left town because the cakes was so delicious.
Were you happy? Would you do it again? The cake surpassed my expectations aesthetically and taste wise. I was a clean and simple cake and Peggy translated that perfectly. The cake was sweet but not too sweet and so delicious. I'm sure Peggy had bigger cakes she had to make along with our cake, but the amount of care she took in this cake made it seem it was the only cake she was doing even though it was a smaller order.
What was the best comment from a guest? They couldn't get enough of the cake. The choice between almond and raspberry satisfied both palettes. My mother, who doesn't usually eat cake, kept nibbling on the cake all night long. The fondant provided a nice texture to the already scrumptious masterpiece.

Review: Couldn't have asked for a better wedding cake!!
What did you get and how did you like it? We wanted a cake that went along with our colors and floral theme. All I had to do was say calla flowers, and I'd like them to hang over and send a piece of our color swatch to Peggy. From those basics, she put together the most beautiful and most delicious cake ever!! I highly recommend the devils food with a caramel filling...
Did they have any other options you liked? Our decisions were more about the flavor of the cake. Our wedding was in a different state than we live and Peggy flew down different samples to us!! We had a great time with our bridal party tasting the different options... which were all sooo good!!!
Were you happy? Would you do it again? Beyond. I have gone to the same bakery since I was a little girl and they also do wedding cakes, however for my wedding, I wanted something special and beyond anything I could ask for and Peggy delivered beautifully.
What was the best comment from a guest? We had guests that had to touch the flowers for proof that they were not real!! They said that it looked amazing and that it was one of the best tasting wedding cakes that they ever had!!
What did you get and how did you like it? a fabulous wedding cake was my primary wedding concern. I wanted something really beautiful and really yummy- the wedding cake should be the primary dessert, not just for show. it was an almond cake with almond and raspberry willing and had beautiful fall leaves over it. The fondant was really tasty too- definitely not a layer to take off.
Did they have any other options you liked? Peggy was really helpful in choosing style and flavor combinations. I knew i wanted almond, but there were lots of options
Were you happy? Would you do it again? Working with Peggy was easy. We are from out of town, and we mostly talked by email. she was responsive and helpful.
What was the best comment from a guest? Guests loved the cake and many people took photos of it before it was cut. I had two pieces!
What did you get and how did you like it? I came to NECC with a random idea for a wedding cake, hoping that not only would she try it but she would put her creative spin on it as well and I couldn't believe how amazing the outcome was. Our cake was truly a work of art, completely original and will never be forgotten for it's sentimental value. Thank you so much for sharing your talent with us on our special day, our guests were blown away!
Did they have any other options you liked? Traditional wedding cake with edible flowers (lillies) or replicating the style of my dress.
Were you happy? Would you do it again? Absolutely. Above and beyond.
What was the best comment from a guest? Our guests found the cake delicious! Our cake replicated motion picture movie reels (my husband and I met while working with motion picture cameras in the film industry in LA) and people loved the edible pictures displyed on the "negatives" throughout the reel!
